You can put as many accounts as you wish into the !admin realm. Anyone who is in this realm will become a super user just like "admin". Specifically this realm may be called /site/!admin.

I have a Sash Command for viewing/adding/removing the admin users:
And.... Alan has already written the man page for it (I need to add the long version switches still).
It's plausible that in the near future you may actually be able to install and use this.

Is there a way to setup more than one admin in Sakai?
Simply add the users to the /site/!admin realm with the role admin.
